Attendees at NAGA’s first Hunting Club Conference are in for a special treat on the final day of the meeting. Many hunting preserves feature dining rooms and lodges where people can eat after their hunt. Some destination lodges are rented out for special events and provide catering services. Nearly all hunting clubs are asked by their hunters for good recipe ideas for gamebirds.

Mid-morning on Wednesday of the conference will feature a gamebird cooking demonstration by Certified Master Chef Alfonso Contrisciani. What is a Certified Master Chef? If this were a military honor, he’d be a four-star general! If this were martial arts, chef Alfonso would be a black belt! In fact, there are only 67 Certified Master Chefs in the United States.

Chef Alfonso is an accomplished educator, restaurateur, executive chef, and pastry chef and held numerous VP and director positions in the country’s leading hotels, restaurants, universities and food service companies. He’s won more than 75 National and International awards, including 36 Gold medals in his career, and competed for Team USA in 1992, 1996 and 2000 in the International Culinary Olympics. He’s even cooked for presidents, including during inaugural balls. Chef Alfonso is the current Executive Director of Culinary Operations & Master Chef at Hocking College.
